Pumpkin Spice Pie

4 generous servings

  • 2 IP maple flavor oatmeal packets
  • 1 egg
  • 2 Tbsp water
  • 1 IP pumpkin spice latte drink mix packet
  • 1 IP vanilla pudding mix packet
  • Optional: ¼ pumpkin pie spice (into the pumpkin and vanilla mixture)
  • 200 ml/7.25 oz water


  1. Preheat oven to 375 degrees
  2. For the crust: spray a small casserole or ramekin with grapeseed oil and wipe excess. Mix the 2 IP maple flavor oatmeal packets, 1 egg, 2 tbsp water, and, using grapeseed oil on fingers to prevent sticking, press the mixture into the dish and slightly up the sides. Cook for 10 minutes at 375 degrees and allow to cool.
  3. For the filling: Add the 200 ml/7.25 oz cold water and whisk to the IP shaker. Pour the packets of pumpkin spice and vanilla pudding into the shaker and shake well after securing the lid. Use a spatula to help pour the contents into the cooled crust. Sprinkle with pumpkin pie spice if desired. Chill in freezer for 15-30 minutes before serving.
