Italian Beef

4-6 servings

  • 2-3 lbs lean beef roast
  • 3 Tbsp Italian seasoning
  • 1 cup low sodium beef broth
  • 12-16 oz jar of pepperoncini slices
  • Lettuce leaves (optional)


  1. Place beef roast into slow cooker. Pour the beef broth and Italian seasoning over the roast and turn slow cooker to low.
  2. One hour before roast is done, add the entire contents of jar of peppers and brine to the slow cooker. Total cooking time is 8-10 hours.
  3. Serve over a lettuce salad or wrap 4 oz in lettuce leaves. If serving as a 4 oz wrap, 2 wraps will meet the requirements for a Phase 1 IP dinner.
